We have lots of great venison recipes over at our Venison-Meat.com website, e.g., http://www.venison-meat.com/html/recipes.html
And there are links on that site to even more recipes. I'm sure you can find some good ones.

One thing that I have tried and liked is: make incision slices in the roast and insert bacon in the slices. It adds "juice" to the roast and really makes whatever recipe you use "wake up"

We're an elk ranch, so using elk roasts instead of deer. But, I've got to believe my wife's recipe would work for deer too. And, it's very easy.
Put the roast in a roasting pot
Add a large can of cream of mushroom soup
Add a large can of chicken broth
Back in the oven at 350 for a few hours until it's done
It makes a very nice gravy from the broth and soup. And, the roast comes out very moist and fork tender.
